Olive and June

Both my heart and my stomach were happy and full after a wonderful evening spent celebrating my favorite recently-turned 21-year-old. The night started out right on time, but we hit a little bump in the road that pushed our plans back a little bit. Everything worked out pretty perfectly, though, so there are certainly no complains on that front. So, let's start at the beginning, shall we?

I made dinner reservations at an Italian restaurant that received rave reviews on the ever-trusty Yelp, called Olive and June. I didn't realize that I pass the restaurant pretty nearly every day whenever I drive toward Mopac, so it turned out to be a neighborhood hidden gem. I decided on Italian because we almost rarely go out for Italian food (thanks to my lactose intolerance, which I will touch on in a minute), so I was hoping that the Yelp reviews would hold true.

Our reservations were for 7:15pm, so I picked him up around 6:45pm, just to be on the safe side. We do live extremely close to the restaurant, but you always have to allow some extra time for parking (at least in Austin). We were walking up to the restaurant when Dylan got a call from his mom that made us choose to abandon our dinner plans - for now, anyway. She had fractured a joint in her wrist (and, I must add, handled it like a champ), so we waited to make sure that she was feeling okay before going back to see if we could get a table at Olive and June. It was about 8:45pm at this point, so we figured, despite the fact that Friday the 13th is usually considered to be an unlucky day, that luck would probably be on our side for this one. It was, and we got a table for two in the outdoor heated seating area, when our incredible waiter, Rafael, immediately brought us out both a dinner menu and a drink menu. 


I went for the Pear Milan, and Dylan went for a Peroni. 


My Pear Milan was excellent, though I made the mistake of drinking it before I had any food in my system. It had been a while since I had my snack of carrots, celery, and hummus, and I immediately felt the alcohol doing a number on me. Luckily, our started salad came out quickly after that, so I was good to go in no time. I also tried a sip of Dylan's Peroni, and though I had the preconceived notion that I don't like beer, this one actually tasted pretty good.


Now, onto the food. We originally decided to split the pork meatballs as an appetizer, but our incredibly helpful and courteous waiter came back to tell us that the meatballs had cheese cooked inside of them (I had already informed him of my lactose intolerance at this point), so we  opted to split the Giardinara Salad, which turned out to be a better decision, anyway. The salad was fabulous, and we finished it off in no time. The salad consisted of butter lettuce, baby romaine, grape tomatoes, cucumber, radish, and parsley, and we both agreed that it was a much better choice to start off with the salad.


For our main dish, I was originally going to go for the day's special - the pan seared scallops, but I was told that it was cooked in all sorts of butter, so I changed my order to the grilled pork chop, which I didn't regret for a minute. It was tender and juicy and cooked and seasoned to perfection. Our waiter brought Dylan out a knife so that he could share the pork chop with me, but as Dylan said, he would be surprised by how much I can eat, and aside from the one bite I let Dylan have, I ate every last bite.


Dylan, going off of Rafael's recommendation, decided on the Bucatini Amatriciana, which is a pasta dish consisting of tomato, calabrese chili, guanciale, and pecorino. I couldn't tell you what really any of those things are, but Dylan also cleaned his plate and really seemed to enjoy it, so I am going to assume that it was a good choice.


We also ordered a side of roasted brussel sprouts (sans cheese, of course), and they were excellent. I used to think I didn't like brussel sprouts, probably because of the way they smell, but I have learned that I do really like them, especially if they are cooked right, and all of the restaurants that I've been to where I tried them, they have been cooked to perfection, adding in the perfect touch of seasoning that makes them so unique to each restaurant. 


We also finished all of those off (are you seeing a pattern develop here?), and our waiter brought us out a dessert menu. Nothing was really standing out to us, and we were already pretty full at this point in the evening, so we decided to pass on dessert for this round. Or so we thought.

Our waiter, along with bringing out our check, brought out two spoons and told us that he wasn't crazy, but that we would be needing them. He asked us if we minded sticking around for a few minutes longer, and seeing as we had nothing too important to attend to, we figured we could spare the extra couple of minutes. Our waiter then surprised us and brought out a Brown Butter Carrot Torta for us to split, courtesy of the couple at the table next to us. I think we were both a little bit shocked, and very appreciative, and though I am not usually a fan of carrot cake, this dessert was excellent. 


Dylan let me have most of the cake pieces, while he went to town on the cream cheese gelato, and we once again cleaned our plate. What made it even sweeter was the gesture behind the dessert. When we went to thank the couple, they told us that we looked like we were having such a good time that they really wanted to do that for us. That brought an immediate smile to both of our faces, and I was so touched by both their words and their gesture. Overall, we had a really great experience at Olive and June, and I don't hesitate to say that we would both give the restaurant five stars - in terms of food and atmosphere. I wouldn't hesitate to recommend it to anyone.


We left the restaurant around 10:45pm, and we headed back to my house so that I could give him his birthday present. He wouldn't let me bake him anything sweet, so instead of cookies or a cake, I gave him a bag of his favorite apples. I can't help but laugh at how similar we are in that aspect, because I would also prefer a bag of my favorite apples to a cake. For his actual present I gave him a framed picture of a Texas flag, that is cooler than it sounds. I had a picture on my phone that I deleted because I didn't want him to discover it prematurely, so you'll just have to use your imagination, and I'll show you a picture once he hangs it on his wall.

So, it was one incredible night celebrating one great guy, though in the index card book I made for Dylan that consisted of "21 Reasons Why I Think He Rocks," I should have included two more things - one, that he puts up with my lactose intolerance (as he is quite the dairy lover), and two, that he doesn't get (outwardly) embarrassed of the fact that I take pictures of my food on the reg. He has begun to accept (and hopefully embrace) it, and doesn't even blink an eye when I whip out my phone to take a picture. So, thanks for that, Dylan. You deserve five gold stars for those two things alone.

Though I didn't end up going to bed until close to 2:00am - I am normally such an early-to-bed, early-to-rise kind of girl, but once I get my second wind, I am good to go for a while - I popped on out of bed at 8:20 this morning. I ate a couple of cuties and then headed to the gym to get in a workout before I headed back home later today, because I knew if I didn't do it while I was still in Austin, it wouldn't be happening today. I covered about 5.4 miles on the treadmill before calling it a morning, and I went back home to make myself some breakfast. Breakfast was nothing out of the ordinary, as I was finishing off some of the last few items on my shelf of the refrigerator, so I sliced up some strawberries, and scrambled up some egg whites and spinach to eat as my last breakfast in Austin for a while.



It was excellent, as usual, and it fueled me to clean our bathroom, and pack up my belongings to load up my car and head home to Houston for the holidays. As soon as I push publish, I am going to finish loading up my car and get on the road, so that I will likely be eating Hungry's and watching the NCAA volleyball tournament on the couch with my mom. Twenty Fun (Round Two)

I know I already have a blog post with this title (see my 21st birthday), but today someone very special to me turns FINALLY turns 21. If you read my last post, you know that today is Dylan's 21st birthday, and we are legally allowed to order some wine with our dinner (because we're so sophisticated and all), and if you have been reading my blog for a while, you know that I love birthdays. Selfishly, I do love my birthday, but I also love celebrating other people's birthdays, or at least making them feel extra special on their special day.


I will make a post about what we actually do to celebrate his 21st, but for right now, just be warned that this portion of my post might get a little bit cheesy. You have been warned.

Happy 21st birthday to the one who faithfully reads my blog (and recites it back to me even though he knows that is high on the list of things that make me feel uncomfortable), willingly taste tests all of my concoctions (and even claims to like them), is trying to turn me into a better decision maker (though this one is taking a while), opens every single door for me, probably enjoys exercise more than I do (and teaches me the science behind it), treats me to delicious dinners on the reg, loves and pursues Jesus,

encourages me always, lets me win when we play sports (even though he has got to be the best athlete I have the pleasure of knowing),


calms me down when I'm stressed out, and among many, many other things, never fails to bring a smile to my face.

So, now that we're past the cheesiness - I have told him that I would dedicate a blog post just to him, and I always try to make good on my word - let's continue on with the day's normal activities, shall we?

Breakfast

I did not sleep very well last night, so I took my sweet time getting up and out of bed this morning. When I did, I ate a breakfast that looked very similar to the breakfast I've eaten every single day this week: egg whites with spinach, a couple of cuties, but instead of sliced strawberries, I finished off a personal watermelon that I dug into just a few days ago. When it comes to watermelon, there's just no stopping me!

I also ate a few of my banana-oatmeal-almond butter muffins, which I instantly regretted because I was so incredibly full after eating them, but hey, they did at least taste good at the time!

Workout

I visited a different 24 Hour Fitness than my usual 24, but this particular location offered a 12:00pm spin class, which was right up my alley because with the little cold I'm fighting, paired with the cold and rainy weather, neither a run nor a swim was going to happen for me today. The class was tough, because we once again did a lot of sprint work with a fairly heavy resistance. It was a toughy, but a goody, and the instructor was the perfect blend of encouraging and demanding.

Lazy Days

I am not going to lie to you guys. Being done with school is really one of the best feelings out there. Though I did just receive an email with my student teaching syllabus, I am choosing to put that one on hold for a while, or at least until after Christmas. Until then, I am going to fully enjoy some much-needed time with friends and family in one of my favorite cities. I am sure I will have many adventures to share with you guys, but some of the must-do's on my list are:

These days few days in Austin haven't been anything too exciting. I've been doing lots of shopping (oops!), quite a bit of hanging out with my sweet roommates (PTL for the fact that after six cold days, our heat was fixed), catching up with some friends whom I don't get to see as much as I would like to during the semester,

some reading (for fun!), and of course, keeping up with my regular workouts. I have also been trying to get myself organized, but so far I have succeeded in accumulating a huge pile of clothes that remain on top of my bed during the day, and move to the floor at the foot of my bed at night. I'm laughing at myself for how much I am just absolutely going to need when I am in Houston, because my car is going to be packed to the brim for my ride home. Once an overpacker, always an overpacker!

Anyway, tomorrow is my last full day in Austin for the year, and it also happens to be Dylan's 21st birthday, so I am excited to get to take him to dinner to celebrate a very special birthday, and what is the first of our two birthdays. It looks like I can finally order a drink or two at dinner and not feel silly for drinking alone!

And lastly, I must give a HUGE shout out to the SHS football team. They are playing in the state semi-final game at Reliant Stadium tomorrow night, and the winner of this game plays for the 4A State Championship in Arlington next weekend. We haven't won a state championship since 1979, and I don't even know the last time we made it this far into the playoffs. One of my roommates told me that as a going on 22-year-old, I have the most high school loyalty of anyone she knows. It's true, I do love Stratford, so I certainly can't deny it, and though I should probably feel ashamed, I have to admit that I feel a little bit proud. Once a Spartan, always a Spartan.

Seven Down

With the end of a semester comes more time to blog. I officially turned in my final draft of my final essay of my college career (assuming I don't have any major essays during my student teaching semester), so I am hereby on Christmas break! I was not sure this day would ever come, but here we are at the end of my seventh semester of college. I am not going home to Houston until Saturday morning, so I have a few days to play in one of the greatest cities. I'm trying not to brag, because many of my roommates still have finals to take and/or papers to write, but it is so nice to be able to do things without the weight of school on my shoulders.

Dylan and I went to a little post-PPR celebratory dinner last night at Galaxy Cafe, which you will probably recognize as one of my go-to Austin restaurants. I originally planned on getting soup, as yesterday's weather was nasty all day and some soup would have been good for the soul, but then the turkey burger caught my eye, and I just couldn't resist it. And while I originally planned on getting a side of vegetables, the sweet potato fries were just calling my name. If you asked me what my true weakness is, I really think it is sweet potato fries. I just can't seem to resist them!


Breakfast + Workout

Today's breakfast looked identical to yesterday's, and though it tasted delicious, it didn't do too much to hold me over through the duration of my 20-minute treadmill warm-up and BodyPump class at the gym. 



My time on the treadmill was nothing new and exciting, but I always like to get a little cardio warm-up in before taking this strength-based exercise class. I alternated five minutes of running at a speed of 7.5mph with five minutes of walking at 4.2mph. It was quick and easy, and just what I needed before BodyPump. BodyPump, because I have been bad and haven't been attending the class regularly, was tough for me today, though it probably wouldn't have been so bad had I been doing those movements on a regular basis. The squat and bicep tracks always kill me, and though I don't necessarily enjoy doing lots of lunges, the lunge track always includes a little plyometric exercise that is always fun(?) to do. Today we did squat jumps, and I have to brag on myself for a minute and say that when the track was done, the instructor said I had the highest jump in the class. I guess all those years of volleyball were good for something, huh?

Anyway, I was feeling pretty ravenous by the time I left the gym, so I came home and immediately downed a couple of my banana-oatmeal-almond butter muffins before showering and heading north to the Domain to get a necklace repaired (and to do some shopping, of course). It was an absolutely beautiful day to shop outdoors, and I got a couple of items checked off of my list. So it was a total win-win.

Lunch

I was more than ready for a real lunch by the time I got home, so I immediately heated up some spaghetti squash and ground turkey with a little bit of spaghetti sauce on top.

It's just like my childhood favorite meal of spaghetti and meatballs, but I wasn't left with that overly full and sleepy feeling that I always get after eating pasta.

In addition to my turkey spaghetti squash, I also enjoyed an especially juicy Honeycrisp apple, with peanut butter, of course. A Honeycrisp apples and peanut butter is my all-time favorite snack, so I'm living the good life right now.


And as an added note, if you are interested in cooking spaghetti squash, here is how I have found is the best way to cook it:
  1. Preheat your oven to 400 degrees
  2. Pierce spaghetti squash all over with a fork to prevent it from bursting while cooking
  3. Place spaghetti squash on foil-lined cookie sheet
  4. Cook for 30 minutes on one side
  5. After 30 minutes, turn it on the other side and cook for 30 more minutes
  6. Let it cool for at least 10 minutes and cut spaghetti squash in half
  7. Scoop the seeds from the center of the cooked spaghetti squash (I like to eat them, though!)
  8. Use a fork to scrape the sides of the spaghetti squash and shred the pulp into strands
And that's all there is to it! It looks intimidating at first, but it really just requires quite a bit of time in the oven. And you'll have leftovers for days (which is always a huge plus for a busy college student)!

My PPR Experience

Happy Monday! Though I can't breathe a sigh of relief quite yet, I checked one huge item off of my list today - my PPR, or the Pedagogy and Professional Responsibilities EC-12 exam. It took place bright and early at 8:00 this morning, and it feels nice to (almost) be free. I am just finishing up the revisions on my final essay for my literary studies class, and then I will be home free! Thankfully, I am pretty nearly done with the essay, so I am hoping to have that turned in in the next day or two.

But I'm going to give myself a little break from school, and spend the rest of today reading, watching movies, and preparing a little birthday surprise. But first, let's continue in the normal fashion.

Breakfast

I woke up multiple times last night - once at 12:30am, again at 2:00am, two hours later at 4:00am, and once more at 5:00am, and I never fully fell back asleep. I think I was so worried about sleeping through my eight alarms that I never got into a very deep sleep. I felt rested, though, when I finally decided to listen to my growling stomach and get up to make breakfast a little before 6:00am, and I took my sweet time making breakfast and getting ready. Not that it took me too long to get ready. My definition of dressing for success is yoga pants and my usual bun on top of my head. Comfort before style, am I right?

Anyway, I scrambled up some egg whites and spinach (it's been a while since I've posted this picture), and enjoyed some sliced strawberries on the side. I also ate a couple of cuties and headed out the door a little before 7:00 this morning. 



The testing center was all of 10 minutes away, but I had to allow time for taking a wrong turn (I didn't let myself down on that one), and we were supposed to be there no later than 7:30am. Plus, if you guys have learned anything from reading this blog, it's that I would much rather be early than be running late. To quote one of my best guys, William Shakespeare, "better three hours too soon than a minute too late."

One of my roommates was also taking the exam this morning, and we quickly found five other classmates who were also taking it. We each grabbed a clipboard and filled out a statement that basically said we are who we say we are (it had to be in cursive - so reminiscent of the SAT days), and they were ready to get us set up at our work station. I knew it was going to be a good morning when the test administrator said she was going to start from the end of the alphabet to make up for all the times we are made to be last, so I got to start the test first. That was actually really great for me because it makes me anxious when other people start a test before I do. I'm not entirely sure why that is, but I've always been that way, so I fully plan on implementing a system that doesn't permit any student to begin a test until every student has one.

This 100-question test took me about an hour and a half to complete, and I will admit that my first time through, I was a little worried about all of the answers that I had "marked" to go back over (which, by the way, is a really neat system that makes it extremely easy to go back and look at the questions that were giving your trouble), but once I took a second look at those questions, I felt pretty confident about most of my answers. To me, the test felt different than any of the practice tests I took, but I still left the testing center with a pretty good feeling. Let's hope it holds true!

Workout

I got back to the Clubhouse around 9:45am, where I basically just lounged around before driving two of my roommates to campus so they could study, and then driving myself on over to the gym for a 12:00 cycling class. Today's class was one that left me nice and sweaty (as always), because we did a lot of "attacking" on hills, which is essentially speed work with a pretty high load of resistance. Sprint work combined with a high resistance is really one of my least favorite things to do on the bike, so I'm glad I was made to do a lot of it today. It may be Monday, but you can still get in a great workout.

Lunch

After a quick shower, I heated up the remains of my pineapple chicken and vegetable dish, and ate that alongside a bowl of carrots and celery and some sundried and tomato basil hummus. Not a bad post-workout meal if I do say so myself!

Stuck in Colder Weather

I don't know what the weather has been like where you are, but it is C-O-L-D here in Austin, Texas, and I am not really enjoying it. I have never been a huge fan of the cold weather, and it has been below freezing since Friday at 7pm, and then you have to add in the fact that our heater has been broken since Thursday, I have been cold to the bone ever since. Today has been a little bit better, and I finally feel like I have warmed up a bit.

This weekend has been a lot of laying around trying to stay warm, watching football, dealing with some unexpected car trouble (but isn't it always unexpected?), and preparing for my PPR certification exam that takes place tomorrow morning at 8am. And when I say preparing, I basically mean going back over practice tests and a few of the concepts like Piaget's stages of cognitive development and things associated with English Language Learners. I woke up this morning and went through everything one last time, and I am not looking at it again. I am not too stressed out about it, but I plan on getting a good night's sleep, eating a good breakfast (duh), and taking my time on the test. I have five hours to answer 100 questions, though I certainly don't anticipate it taking quite that long. The only thing that might throw me off is the fact that the test is taken on a computer, and I am very much a pen-and-paper kind of girl. I'll be sure to keep you updated!

Anyway, after going through all of my exam materials one last time, I shed my multiple layers in favor of Nike shorts and a t-shirt so I could hit the gym for a run. I created this 50-minute treadmill workout, and ended up completing just under six miles. 


Not too bad for someone who has had a lot of trouble getting motivated to do anything in this weather! And I promise I'm going to stop complaining about the weather, but I just had to get it out of my system. You've probably gathered by now that I much prefer the summer months. Or at least temperatures in the 50's!

After my run and a quick shower, I headed to Central Market to get a few things to last me through this next week (because this time next week I will be HOME!), and came home to eat lunch. I ate a nice hot bowl of my pineapple chicken and vegetable dish, topped with salsa of course, and as soon as I publish this post, I am off to run a few more errands before attending a 5:00 church service. 


And once I get home I think I'll either curl up with a book or a movie and go to sleep nice and early in preparation for my exam tomorrow. Wish me luck, and I hope you have a wonderful Sunday!

Holiday Pinterest Inspiration

This poor blog has been getting the shaft these days, but I promise that after Monday, I will be much better about making regular posts. Until then, know that school is taking over my life, but that I'm almost done. However, because school is so crazy right now, I want nothing more than to put it on hold and go Christmas shopping, make Christmas cookies, and cross a few books off of my to-read list. And though I am not a fan of the cold weather, it does make it feel more like Christmas, so school work is not high on the list of things that I want to do. But, it must happen, so I'll make a list of goodies to bake after I finish my final paper. So, without further ado:


You can look forward to all of these recipes appearing on the blog in some form or another over this break! If you want to be on the receiving end of some of these baked goods, don't be afraid to ask - I LOVE baking for other people.
